Carrot halwa

Carrot halwa is also known as gajar ka halwa and gajorer halua. It is a carrot-based sweet dessert pudding in India It is made by grated carrots with a specific amount of water, milk and sugar and then cooking while stirring regularly. It is often served with a garnish of almonds and pistachios. The nuts and other items used are sauted in ghee. This dessert is traditionally eaten during all of the festivals in India, mainly on the occasion of Diwali, Holi, and Raksha Bandhan.

Ingredients
- 3 Tbsp Ghee
- 4 Cup Grated carrot
- 1.5 Cup Milk
- 3/4 Cup Sugar
- 1/2 Tsp Cardamom powder
- Pistachio
- Cashew nut
- Almonds Sliced
Instructions
- In a pan add some ghee, to this add grated carrot. Saute and cook well for 8-10 minutes.
- To this add milk and mix well. Saute well till moisture gets absorbed.
- Add sugar to it and mix well. Saute it in medium flame and cook it till moisture gets evaporated completely.
- To this add all the nuts and some more ghee and mix well. Carrot halwa is ready to serve.
