Mandi is one of the traditional food item which is originated in Yemen. It is usually made from rice, meat and mixture of some spices. The meat used may be either lamb, camel, goat or chicken. It is normally cooked in a pit underground. We can also prepare it without a pit with the same taste and flavour. It is extremely popular in Arabian countries and malabar area of kerala. Now lets see how to prepare this tasty chicken mandi without a pit.

Ingredients
  

For chicken marination

  • 1 Chicken
  • 1 Tsp Chilli powder
  • 2 Tbsp Mandi masala
  • 1/4 Tsp Turmeric powder
  • 1 Tsp Salt
  • 1 Tsp Lemon juice
  • 1 Tbsp Oil
  • 1 Tbsp Ginger garlic paste

For rice

  • 2 Cup Basmati rice
  • 1 Tbsp Oil
  • 1 Tsp Cumin seed
  • 2 Green chilli
  • 1 Onion Finely chopped
  • 1 Tbsp Mandi masala
  • 1 Tsp Salt
  • Water

Instructions
 

  • In a bowl add all the ingredients for chicken marination and mix them well. Refrigerate the marinated chicken for an hour.
  • In a rice strainer place all the chicken pieces. Steam and cook it for 30 minutes.
  • In a stew pot add oil, cumin seeds. Saute it.
  • To this add green chilli, onion and mandi masala. Mix it and saute for a minute.
  • To this add 4 cups of stock water and salt.
  • When the water starts to boil add the washed basmati rice.
  • In a pan add some oil and fry the chicken slightly.
  • When the rice gets cooked almost. Place the fried chicken on the top. And cook it till rice get cooked.
  • In a small steel bowl place the burned charcoal piece, pour some oil to it. Place it on top of mandi. Cover and smoke it for 2 minutes.

Notes

  • smoking is done to get the same flavour when cooked in pit.
