How to make Pani puri at Home

Pani puri is a type of indian snack item. It is a type of crispy ball shaped hollow item . The hollow space is filled with mashed potatoes and pani. Pani is a hindi word which means water. This hollow puri is filled with the pani prepared.

There are many other names for pani puri. The name changes according to the region. It is also called as phushka, padake, fulki and much other names. The puri is prepared from the dough of flour and semolina. Semolina is very important part to prepare the dough.

The semolina gives a crunchy texture for the puri. For filling the hollow space pani is very important. The pani is prepared with mint leaves and coriander leaves. Sometimes a sour pani is also used for filling the pani puri. Now lets see how to prepare indian pani puri from home.

For dough/the puri

  • 1 Cup Wheat flour
  • 1/4 Cup Semolina
  • 1/2 Tsp Salt
  • Water As required

For sweet and sour pani

  • 250 g Tamarind
  • 400 g Jaggery
  • 2 Tbsp Chaat masala
  • 1/2 Tsp Salt
  • 1 Litre Water

For pani puri pani

  • 1 Cup Mint leaves
  • 1/2 Cup Coriander leaves
  • 3-4 Green chilli
  • 1 Inch Ginger
  • 1 Tbsp Chaat masala
  • 1/4 Tsp Salt
  • 5 Cloves garlic
  • 1 Tbsp Tamarind pulp
  • 2 Cup Water
  • 1 Lemon juice

For vegetable filling

  • 3 Potatoes Boiled
  • 1 Cup Onion Finely chopped
  • 1/4 Cup Coriander leaves Finely chopped
  • 1 Tsp Garam masala powder


  • In a bowl add wheat flour, semolina, salt and water. Mix them well. Kneed them and keep it covered for an hour.
  • In a bowl add tamarind and some water. Smash and mix it well.
  • In a pan add the tamarind mix, jaggery, chaat masala, salt and remaining water. Stir it occasionally and cook it for 2-3 minutes.
  • Strain this sweet and sour pani and keep it aside.
  • In a blender add mint leaves, coriander leaves, green chilli, ginger, garlic, chaat masala, tamarind pulp, salt and some water. Blend it well.
  • Strain it, and then add lemon juice and mix well. Keep it aside.
  • Kneed the dough well, take some portion and roll it with rolling pin.
  • Using a cutter cut the rolled out dough to small circles.
  • Deep fry the dough, beat slightly on top to make it a ball shape. Fry it till it form a crunchy layer.
  • In a bowl add the boiled potatoes and mash it well. To this add onion, coriander leaves and garam masala powder. Mix it all well.
  • Take the puri and make a hole in the centre by slightly tapping on it.
  • Fill the hollow space of puri with potato mix and both pani prepared. Tasty pani puri is ready.


  • we can also add boiled peas with mashed potatoes.
  • spicy food lovers can add more green chilli in the pani puri pani.
  • Cinnamon powder can also be added to the pani puri pani to make it much tastier.
