Pradhaman

Pradhaman is a payasam which means a sweet drink which is famous in kerala sadya. Pradaman is one of the important part in a sadya. Usually sadya is made during Onam or any other festivals or celebrations. A typical sadya means a combination of 5 or more dishes. At the most 27 dishes are served in a sadya. Now lets see how to prepare pradhaman.

Ingredients
- 1/2 Kg Split green gram dal
- 2 Cup Thick coconut milk
- 2 Cup Thin coconut milk
- 1 Kg Jaggery Melted and strained
- 1 Tbsp Ghee
- 2 Cardamom Crushed
- 1 Cup Water
- 2 Tbsp Coconut bits
- 8-10 Cashew nuts
- A Pinch Salt
Instructions
- In a pan slightly roast the split green gram dal.
- In a pressure cooker add the roasted dal, water and a pinch of salt. Cook till it whistle once.
- To this add the thick milk of coconut and cook for a minute.
- Then add the thin milk of coconut and mix it all well. Cook it for 5-6 minutes . Stir occasionally.
- To this add the jaggery syrup. Stir it occasionally and bring it to boil.
- When the pradhaman get boiled add the crushed cardamom.
- In a pan add the ghee. Roast coconut bits and cashew nuts in ghee.
- Pour this on top of the pradhaman.
