Carrot soup

Soup is a liquid food item which is usually served hot or warm. The main ingredient used for preparing soup is vegetable or meat broth (stock). There are different varieties of soup. Traditionally soup is served as starter and in some region it is served as a main course. Carrot soup is a soup which is prepared with carrot as main ingredient. It is usually prepared in creamy consistency.

Ingredients
- 1 tbsp Butter
- 1 tbsp Vegetable oil
- 1 cup Onion chopped
- 800 g Carrot peel and slice
- 3 tbsp Ginger chopped
- 3 cup vegetable broth
- 1/2 tsp Salt
- 1/2 tsp white pepper powder
- 1 tbsp Thick coconut milk or cream (to garnish)

Instructions
- In a pan add butter and onion. Saute well.
- Add carrots and ginger. Mix well
- Add vegetable broth and salt. Cover and cook till carrot softened.
- Turn off the heat and blend to smooth cream.
- Heat the creamy carrot, add more broth if required.
- Add pepper powder and mix well. Serve hot.
Recipe Notes
- Ginger can be avoided, if you do not like the taste of it.
