A tres leches cake is a type of sponge cake which is soaked in three kinds of milk. The name tres leches is a Spanish word which means three milk. The three milks used are evaporated milk, condensed milk and heavy cream. It is said that the idea of tres leches cake is issued by Nestle company. It first appeared on Nestle condensed milk can label. A different varieties of tres leches cake are popular all over the country. Many flavoured tres leches cake are prepared now a days. Rose milk tres leches, pistachio tres leches, chocolate tres leches are some among the varieties. Here let me show you how to prepare tres leches cake.

Ingredients
  

For cake

  • 4 Egg yolk
  • 3 Tbsp Sugar
  • A Pinch Salt
  • 3 Tbsp Milk
  • 1 Tsp Vanilla essence (Optional)
  • 3 Tbsp Oil
  • 80 g All purpose flour
  • 1 Tsp Baking powder
  • 4 Egg white
  • 3 Drops Lemon juice
  • 1 Tsp Pistachio flavoured food color
  • 1/4 Cup Sugar

For tres leches

  • 250 ml Heavy cream
  • 200 ml Evaporated milk
  • 200 ml Condensed milk

For topping and garnish

  • 1.5 Cup Whipping cream
  • 1/4 Cup Powdered sugar
  • 2 Tbsp Powdered pistachio
  • 8-10 Edible rose buds (Optional)

Instructions
 

  • In a bowl add egg yolks, sugar, a pinch of salt, milk, vanilla essence and oil. Whisk it all well with a hand whisk.
  • To this add all purpose flour and baking powder, then mix it well.
  • In a bowl add egg whites and beat it using electric egg beater.
  • Gradually add sugar to it one portion at a time, for three times.
  • To this add lemon juice and pistachio flavour food color. Beat it till stiff peak.
  • To this egg white mix add the egg yolk mix and fold and mix it together.
  • In a baking tray pour the cake batter.
  • Preheat the oven 150℃ and bake the cake for 30-35 minutes.
  • In a bowl add heavy cream, evaporated milk, condensed milk and pistachio food color. Mix it all well.
  • Slightly pull out the cake with a fork to make some holes so that milk get absorbed completely .
  • In a bowl add whipping cream and sugar and beat it till hard peak.
  • In a piping bag add whipping cream and pipe it on top of the cake.
  • Garnish with pistachio powder and rose buds.

Notes

  • Can skip food color to make plain tres leches cake
  • can use any other flavoured food color like rose milk, chocolate etc.
